Mom's Maple Pecan Pie

Ingredients:

2 eggs
1 cup dark amber maple syrup
1/2 cup sugar
3/4 cup pecan halves
1/4 teaspoon salt
1 unbaked pie shell
1/4 cup melted butter

Beat all ingredients together except for the pecans. Then stir in the pecans. Pour into unbaked pie shell.  Bake at 375 degrees for 40 minutes.

Maple Oatmeal Bread

Ingredients:

1 cup boiling water
1 teaspoon salt
3/4 cup hot black coffee
3 packages baking yeast
1 cup rolling oats
1/4 cup lukewarm water
1/3 cup butter
5-6 cups flour
3 eggs
3/4 cup dark amber maple syrup

Combine boiling water, coffee, oats, maple syrup, butter and salt. Let mixture cool to lukewarm. Dissolve yeast in the 1/4 cup lukewarm water then add to mixture. Blend in the eggs and flour and knead until smooth. Place in large bowl, cover and let rise until double in bulk. Knead and divide into two loaves. Place in greased loaf pans. Let rise. Bake in 350 degree oven for about 50 minutes.

Great toasted with Maple Cream on it.

   
 

Peplau's Maple Marinade

Ingredients:

1 part dark amber maple syrup
1 part soy sauce
1 part lemon juice
Lots of whole garlic
Lots of ground ginger

This marinade is great for just about any kind of meat. We like lots of garlic and ginger, but you need to put in the amount that you want. Start with one cup each of the syrup, soy sauce and lemon juice and 4 cloves of garlic and 1 tablespoon of ground ginger. Mix it all together and pour over the meat. Let the meat sit in the marinade for a day or so.
