Maple Oatmeal Bread
Ingredients:
1 cup boiling water
1 teaspoon salt
3/4 cup hot black coffee
3 packages baking yeast
1 cup rolling oats
1/4 cup lukewarm water
1/3 cup butter
5-6 cups flour
3 eggs
3/4 cup dark amber maple syrup
Combine boiling water, coffee, oats, maple
syrup, butter and salt. Let mixture cool to lukewarm.
Dissolve yeast in the 1/4 cup lukewarm water then add
to mixture. Blend in the eggs and flour and knead until
smooth. Place in large bowl, cover and let rise until
double in bulk. Knead and divide into two loaves. Place
in greased loaf pans. Let rise. Bake in 350 degree oven
for about 50 minutes.
Great toasted with Maple Cream on it.
